vegetable pie

A good pie as a main dish or as an appetizer, which can also be prepared in advance and then heated when ready to serve. If you wish, you can substitute or add other vegetables. If you hurry you can use a bag of frozen grilled vegetables.
 
Ingredients:
    vegetable pie
  •      1 courgette
  •      1 red or yellow pepper
  •      1 aubergine
  •      1 potato
  •      1 sprig of rosemary
  •      1/2 onion
  •      1/2 bucchiere of dry white wine
  •      1 egg
  •      1 clove of garlic
  •      1 tablespoon oil EVO
  •      2 tablespoons of bread crumbs
  •      2 tablespoons parmesan cheese
  •      1 roll of puff pastry ready.
Time: 1 hour
Oven: 356 ° F

Clean the vegetables and cut into little squares.
Fry in a pan the chopped onion and a clove of garlic with the rosemary. Add the vegetables and sprinkle with 1/2 glass of white wine.
Salt to taste.
Bake for 15 minutes with the lid, then remove and allow to dry the vegetables. When all the liquid has been absorbed remove from heat and let cool.

Roll out the puff pastry and cut round if both sides in order to create a rectangle, if not cut a piece of the dough stretched

Remove the rosemary from the vegetables in the pan and mix the egg and bread crumbs.
Pour the mixture over the puff pastry (fig.1), add the Parmesan cheese and seal securely to the sides, if you have the proper tool to create the decoration with the scraps of dough, if not cut the remaining dough into strips and cross over (fig.2).

Bake for 15/20 minutes until it is golden brown.
Serve hot or warm.

Little coffee cakes

Ingredients:
    Little coffee cakes
  • 1 pot of yogurt with coffee
  • 1 pot of brown sugar
  • 2 pot  of flour for cakes
  • 1 pot  of potato starch
  • ½ pot  of vegetable oil
  • 2 tablespoons instant coffee
  • 2 eggs
  • 1 tablespoon of baking powder
  • 1 teaspoon of vanilla
  • 3.53 OZ (100 grams) dark chocolate or milk one
  • granulated sugar to decorate if you desired
Time: 45 minutes
Oven: 302 ° F


Pour the yogurt in a large bowl and then use the empty pot as a measure.
Add brown sugar, eggs and mix with a whisk until frothy.
Stir in the instant coffee to the mixture and continue to mix slowly pouring the flour and then the starch.
Mixing pour the oil flush, vanilla and finally the yeast.
The mixture must be homogeneous.
Pour the mixture into molds with a few different forms, I used those donuts and those round.
Bake for about 30 minutes, check the cooking with a toothpick.
Unmold the cakes and let cool on a wire rack.
Melt the chocolate in a  double saucepan with a fork, pierce the sweet from the bottom and dip them in melted chocolate, then place them on a plate gently on some add granulated sugar to taste.
Allow to solidify the chocolate and ….bon appétit!

Wholemeal bread with poolish

The poolish is a liquid yeast, which is prepared before final dough, through the mixing of flour and water in equal quantities.
Only difficulty, the percentage of yeast to be used: not fixed but varies depending on the time for which is left to ferment the poolish.
I do rise without adding another yeast, but in this case the time must be very long: 8-12 hours.

Ingredients
for the poolish:
  • 7.05 OZ (200 grams) of water
  • 7.05 OZ (200 grams) of flour manitoba
  • 1 teaspoon dry yeast powder slowly rising (or 7 gr. fresh yeast in cubes)
for the dough:
  • 8.82 OZ (250 grams) of flour manitoba
  • 8.82 OZ (250 grams) whole wheat flour
  • 7.05 OZ (200 grams) of water
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon of salt
Time: 10 min + a night of rising + 2 hours
Oven: 450 °F  with a small bowl of water

Make the poolish: cliffs yeast in warm water for 5 minutes, put it into the mixer and mix it with the flour until the dough is sticky enough liquid. Cover with plastic wrap and let it sit all night, or at least 4 hours, to expand and fill with bubbles.

Put in the mixer, or in a large bowl 200 ml of water, 1 tablespoon salt, 1 tablespoon extra virgin olive oil, 250 grams of flour and 250 of manitoba flour. Turn on the mixer with the hook on the program medium speed for 5 min or kneading with hands for 10 min.

The dough should be soft but not sticky. If necessary, add flour if it is too sticky or water if too hard.
Let it rest in the bowl with a cup of water covered cloth covered for 2 hours.
Take the dough, give it a good punch, knead briefly and roll it out with a rolling pin and a little flour.
Put the dough in a baking tin, but it is steel. Let it rest for half an hour - an hour (fig.1).
After rush with water (fig.2).
Bake for 15/20 minutes with a bowl of water.

Hearts with jam

Hearts with jam
Ingredienti
  • 7.05 OZ (200 grams) of corn flour
  • 7.05 OZ (200 grams) potato starch
  • 3.53 OZ (100 grams) sugar
  • 3.53 OZ (100 grams) of butter
  • 2 eggs
  • 1 small glass of rum
  • 1 teaspoon of vanilla extract
  • 13.53 OZ (100 grams)  apricot jam
Time: 45 minutes
Oven: 356° F

 Mix the butter after it softened at room temperature with the sugar and the eggs until frothy.
Add the corn flour, rum and then the starch a bit at a time.
Mix with the vanilla.
Take the molds, grease with a little butter and fill half of them with the mixture, add a tablespoon of jam and then cover with more dough.
Bake at 356° F for 30 minutes.
Turn out immediately and cool.

Sprinkle with powdered sugar.

Autumn salad in crispy rice

The return of some warm sunshine reported a desire to salads at the beginning of the meal, like the one that I propose today, served in a crispy rice cup. Could be proposed as a light appetizer. If you wish, you can change the vegetables or add others.

Autumn salad in crispy rice

Ingredients for 2 people:
  • 4 wafer of rice 
  • 2.82 OZ (80 gr.) frozen broad beans 
  • 3.53 OZ (100 gr.) of mixed salad 
  • 2.82 OZ (80 gr.) rocket 
  • 1 courgette 
  • pepper 
  • salt 
  • EVO oil for seasoning 
  • 1 organic lemon
Time: 1/2 hour
Grill oven
392 °F

Cut the
courgette in thinly sliced and put it to marinate in a plate with a pinch of salt, pepper, a tablespoon of oil and 1/2 lemon juice.
Turn on the oven grill to
392 °F.
Boil the beans in boiling salted water for 10 minutes and drain.
Wash the lettuce and the
rocket and spin it, put it in a bowl and season.
Take the rice waffles (you can find them in the in the department of ethnic products), dampen a cloth and place them on one at a time. When they become soft, take a bowl that can go in the oven, flip it over, brush with a little oil and place over 2 waffles moistened.
Put under the grill for 5 minutes or until crispy.
Turn it upside down and place it on a plate.
Repeat the same procedure for all the cups, I use two wafers of rice instead of one so that they are less fragile.
In each cup to put the salad sauce,
courgette on the board, the beans and season with lemon juice, salt and a little olive oil EVO.
enjoy your meal and eat everything ... even the cup!

Broad bean's purée

 A very simple dish that you can serve with crackers as an appetizer.

Broad bean's puréeIngredients:
  • 200 g dried broad bean
  • 100 gr. parmesan
  • 1 leek
  • 1 tablespoon extra virgin olive oil
  • ½ cup of dry white wine
  • 2 sage leaves
  • ½ teaspoon turmeric
  • salt
Time: 15 minutes + baking

Soak the beans overnight (or 10 hours), cook in pressure cooker for 20 minutes.
Drain and mash with a fork.
In a non-stick pan fry the finely sliced ​​leek in a little oil, add the chopped sage and mashed beans.
Season with turmeric. Add ½ glass of dry wine. If you want to pass all in the mixer if not yet crushed with a fork.
Add the Parmesan cheese and bake until the puree does not detach itself from the sides of the pan.
Serve warm or cold.

Cake "Gianlu" birthday!

Great for parties, "standing" or children because the cake is already portioned and easy to serve and eat ...!
Cake "Gianlu" birthday!

Ingredients:
  • 5.30 OZ (150 grams) flour
  • 5.30 OZ (150 grams) potato starch.
  • 3 eggs
  • 5.30 OZ (150 grams) sugar
  •  ½ teaspoon of baking powder
  • 7 OZ (200 grams) of dark chocolate
  • 8.80 OZ (250 grams)  whipping cream or  Dolceneve Paneangeli
  • 2 tablespoons colored sugar to decorate
  • 1 stick of marzipan
  • 2 tablespoons icing sugar

Time: 45 min
Oven: 350 ° F


Before preparing the cake think the word you want to dial, count the letters, and accordingly if each letter will be in a square of 2 inch see if there is enough basis or if you need to do more.
I from this base of about about 11 x 17 inch I got 15 squares.

Whip eggs with sugar with the mixer until creamy frothy.
Add the starch and flour slowly, the dough should be smooth enough, if it was too hard to add one or two tablespoons of milk.
Add the vanilla and baking powder.
Cover with wax paper a rectangular  baking sheet  (about 11 x 17 inch )
Spread the mix evenly.
Bake at 350 ° F for 15/20 minutes, must just browning.

Remove from oven and let cool.

Melt the chocolate in a double boiler, meanwhile cut the letters to make the words you want: roll out the marzipan with a rolling pin, helping with icing sugar to prevent sticking. After having obtained a sheet of about 0,40 inch thick and cut out the letters with stencils or with a boxcutter. I did it with the boxcutter and I assure you that it is not difficult. The trick is to cut the first of the squares of about 1,20 inch or the size in which you want the letters and then by squares affect the letters, so they will all be the same size.

Now trimmed the cake so to obtain a rectangle and cut into squares of about 2 inch, place them on a wire rack and cover with dark chocolate.

Whip the cream Dolceneve or whipping cream and a pocket formed many small tufts on a platter.
Decorate with colored sugar.
Place the letters on the squares of cake, the chocolate must not yet have solidified completely, so that the letters remain attached.
Carefully compose the writing on the dish covered with cream and let stand in refrigerator for at least half an hour!

Burgers beans and rice

A good dish and an alternative to meat. Can also be used as a main dish.


Burgers beans and rice

Ingredients for 2 people:

  • 1 cup rice  
  • 1 cup beans (if dried soaked in water the night before with bicarbonate) 
  • 1 carrot 
  • 1 courgette 
  • 1 shallot 
  • 1 egg 
  • 2 tablespoons oil EVO 
  • 1/2 teaspoon curry 
  • 1/2 cup breadcrumbs 
  • 3 tablespoons parmesan cheese     
  • salt
Time: 30 min with beans cookedIf using dried beans cook for 25 minutes in a pressure cooker. 
Cook the rice separately. 
Peel and clean the carrot, zucchini and scallions. Grate the carrot and zucchini, cut in thin slices the shallot.
 to soften Cook the shallots in a frying pan with a tablespoon of oil.
Add the grated vegetables.
Mix in a mixer beans and rice. Add the sauteed vegetables and egg.
Correct with breadcrumbs if the mixture is too liquid.
Add parmigino and 1/2 teaspoon curry. Season with salt.
In a dish put the remaining bread crumbs, roll into balls the mixture and roll in bread crumbs.
Bake in a pan with a little oil (or in the oven if you prefer) for 5 minutes right and left.




Serve with seasonal salad.

Clafoutis of grapes


The clafoutis, or clafouti, is a sweet baked compound in the original recipe by black cherries dipped into a paste similar to that of crepes. The name comes clafotis Occitan, from the verb "clafir" which means to fill, implied "cherry". The cake is also excellent when prepared with grapes or other fruit.

Ingredients:
  • 20 grapes black or white
  • 2.83 OZ (80 gams) sugar
  • 3 eggs
  • 7 OZ (200 grams) of flour type 00
  • 1 cup of milk
  • 2.83 OZ (80 gams) and the butter for greasing the pan more than
  • 1 small glass of sweet wine
Time: 1 hour
Oven: 392 ° F

Grease a baking sheet and place on the bottom of the grapes, washed and dried, without overlapping (fig. 1)
With a hand whisk or electric mix the sugar with the melted butter in a double boiler and the eggs.

Add the milk little by little and gently incorporating the flour until the mixture is smooth and fairly liquid. Always flush the sweet wine, stirring to incorporate.
Pour the mixture on the grapes (fig.2) and bake in a hot oven for 15 minutes at 392°F then lower to 300 ° F and cook for 30 minutes.

Serve in the pan, too warm with a dusting of icing sugar.

Octopus with peas and vegetables

Ingredients for 2 people
  • 4 little octopus (or two large)
  • 80 gr. peas (also frozen)
  • 1 courgette
  • 1 aubergine
  • 1 small onion
  • ½ cup of dry white wine
  • 2 tablespoons olive oil EVO
  • 1 lemon
  • 2 sage leaves
  • 1 tablespoon of parsley
  • salt
Time: 45 minutes

Clean the eledone  and rinse well under running water.
Let them boil for 20 minutes or for 10 in the pressure cooker (remain softer) with lemon cut in half.
In a skillet, sauté the onion and sage in the oil and when it is golden add the peas.
Drain the octopus, remove the skin under cold water, and cut into pieces.
Add them to the peas and pour in the wine. Cook for 20 minutes.
Meanwhile, grilled courgette and eggplant, cut into slices and arrange on a serving dish. Add salt drizzle with a little olive oil EVO.
Add to center the eledone with peas, sprinkle with chopped parsley and serve, warm, with slices of toasted bread.

Oat flakes' bread

Ingredients
Oat flakes' bread
  • 200 ml of water
  • 1 tablespoon brandy or alcohol
  • 1 tablespoon of salt
  • 1 tablespoon extra virgin olive oil
  • 250 grams (8.82 OZ) of maitoba flour
  • 80 grams (2.82 OZ) of oat flakes
  • ½ packet of dry yeast to slow rising or ½ cube of fresh yeast
  • 1 tablespoon olive oil
Time: 10 min + 3 hours for rising
Oven: 480° F (250 °C) with a bowl of water onside the owen


Put in the mixer, or in a large bowl, ingredients in the following order:
250 ml of water, 1 tablespoon of alcohol, 1 tablespoon salt, 1 tablespoon extra virgin olive oil, 250 grams (8.82 oz) of flour maitoba, ½ sachet of dry yeast to slow rising or ½ cube of yeast fresh beer.
Turn the mixer with the hook on the program medium speed for 5 min or kneading with the hands for 10 min. Then put the oat flakes and knead for 5 minutes.
The dough should be soft but not sticky. If necessary, add flour if too sticky or water if too stiff.

Let rest in the bowl with a cup of water and covered with a cloth for 2 hours (or more, I'll prepare it in the morning before going to work for the dinner).
Take the dough, give it a nice punch, knead briefly and roll it out with a rolling pin and a bit of flour.

Make small balls with the dough, brush with oil and put on some oat flake, then put them on a baking sheet.
Let stand for half an hour - an hour.

Bake with a cup of water for 15/20 min or until it is golden brown.

Banana cake with ginger and cinnamon

Banana cake with ginger and cinnamon

Ingredients:
  • 2 bananas
  • 1 pot of yogurt natural white
  • ½ pot of vegetable oil
  • ½ pot of  brown sugar
  • 3 pot of flour 00
  • 1 teaspoon of ginger powder
  • 1 teaspoon cinnamon powder
  • ½ teaspoon of baking powder
  • 2 tablespoons apricot jam
  • 2 tablespoons of rum
  • 2 eggs
  • 2 tablespoons icing sugar
Time: 1 hour
Oven: 350° F


To measure the ingredients you can use the empty pot of yoghurt.
Mix the yogurt with the oil, sugar and two egg yolks, taking care to keep the egg whites.
Stir in the flour gradually, stirring constantly.
Mash the bananas with the exception of five slices and add to the mixture.
Beat the egg whites until stiff and fold gently.
Add the ginger and cinnamon.
Mix and pour into a round cake pan of 7.88 inch (20 cm)
Level, place the previously cut banana wheels and brush with the jam dissolved in two tablespoons of rum hot.
Bake for 45 minutes or until a toothpick inserted comes out clean.
Freshly baked unmold and sprinkle with powdered sugar.
